There are two schools of thought on menus - 'keep it the same and do not change a thing' says one school whilst the other swears by the fact that 'change and constantly challenging and innovating' is the way forward.

Having been around the block for a good few years we have learned to strike a balance - we like the fact that our customers and our team get to know the product intimately - it supports consistency across the board. And we love the flourish of a new dish or item that someone crafts, uncertainly at first, but with care and dedication seeing it through the stages - shaped and refined into something that starts to take its place amongst the steady, well known, older hands.
